Every time I stroll through Trader Joe’s, I see their brioche loaf and want to try it! And when I think of brioche bread, two things come to mind: french toast and bread pudding. And if you ask me, a good french toast pretty much IS bread pudding. So, I finally grabbed the bread and a few more ingredients and went to work.
I’ve said it before, and I’ll say it again. I’m obsessed with all things brunch. This french toast makes a delicious brunch front runner, and can be made ahead of time (as in, the night before) so morning prep is cut in half. Here’s the scoop:
Ingredients:
1 loaf of bread (I used brioche, but you could use a french loaf as well)
1 C of mascarpone cheese
1/2 C heavy cream
2 eggs
1/2 C milk
1/2 tsp vanilla
1 C blackberries
Instructions:
Mix the batter (eggs, milk and vanilla). Slice the bread into halves. Soak the halves in the batter and stuff into a pan or cast iron skillet. Let this sit at least one hour, but preferably overnight. Mix cheese and cream together and pour over the french toast. Take blackberries and stuff between halves. Bake in a 350 degree oven for approximately 30-40 min.
Top with powdered sugar. Serve with warm maple syrup. Enjoy!
