Two favorite recipes together in this healthy combo … a lighter dessert, a sweet snack or a slightly indulgent breakfast … you be the judge! This chocolate chia pudding is a twist on the recipe from Food Network’s The Kitchen, which is a favorite show of mine. I swear I’ve made so many of the recipes I’ve seen there because they are usually so easy! This pudding is our go-to when my husband and I are craving something sweet after dinner, but don’t want to eat tons of sugar. Granted, we do tend to add some homemade whipped cream, but for some reason, it still just feels healthier! It’s like ordering the diet Coke with the cheeseburger and fries …
Anyway, this pudding is very simple to whip together. The granola is a bit more time-consuming, but still relatively easy. It’s also a healthy alternative to the sugar-packed granolas you buy in stores. Truth be told, Chloe is just not a granola fan whatsoever, but she humored me and tried this. It wasn’t a win for her, but she happily scraped it off to eat the pudding. So depending on your kids’ tastes, this granola may or may not be a hit, but any granola-loving adults will enjoy this!
Chocolate Chia Pudding
Ingredients:
1 1/2 C milk (whole is best, but LF will work)
1 C coconut milk
3/4 C chia seeds
1/4 C unsweetened cocoa powder
3 TBSP honey
1 tsp Vanilla
Directions:
Combine all ingredients in a bowl. Cover with wrap and let sit in refridgerater 2 hours or overnight (I recommend giving it a stir about an hour in). Top with granola, fruit … or whipped cream!
Granola
Ingredients:
1 C chopped raw almonds
1/2 C chopped raw cashews
1/2 C raw coconut chips (broken up if pieces are large)
2 C oats
1/4 C chia seeds
1 tsp cinnamon
1/2 C melted coconut oil
1/2 C maple syrup
1 tsp Vanilla
Directions:
Combine wet ingredients into a bowl and stir. Put dry ingredients into a seperate bowl and pour in wet mixture. Mix well so everything is coated. Spread granola flat onto a baking sheet and bake at 300 degrees for about 15-20 minutes. You may need to re-stir halfway through. It should smell toasty. Let cool, then refridgerate. Enjoy!
