Okay guys, this Friday Favorites is extra fun! First, it’s our “Foodie Friday” edition, and second … I’m going rogue and talking about a favorite BAD food for kids! And by bad, I just mean unhealthy. I’ve been talking a lot on my instagram about healthy foods for kids and making better changes when it comes to snack time for my girls. I definitely believe in eating healthy most of the time, but I also believe in enjoying life and that means indulging here and there! Chloe inherited my sweet tooth and though I do have to limit her sugar intake, I also allow her to enjoy a yummy treat every and now then … and I usually enjoy it with her!
So today, I’m sharing a recipe for Chloe’s absolute favorite sweet treat! She is one happy girl when we go to Starbucks and I let her choose one of the cake pops. I had never tried my hand at making them at home so I thought we’d better give it a whirl. It’s a process with a lot of steps so I kept it simple for this first go-around and used box cake and canned frosting. Maybe next time I’ll make the cake and frosting from scratch!
If your kiddos would go crazy for a cake pop (like mine does!), consider making them at home! Here’s my recipe and a few little tips I have for making the process a bit smoother.

Easy(ish) Homemade Cake Pops:
box cake of your choice
canned frosting of your choice
white or semi-sweet chocolate
sprinkles
lollipop sticks
Make your cake according to box instructions. Let cool completely. Break up the cake into small pieces and combine with the frosting … little by little! You will not need the entire can of frosting. If you add too much, your cake pops will be too gooey so it’s important to go slowly. You want the texture to be just moist enough to bind. Once mixed, you will form balls. If the mixture seems a little difficult to form into balls right away, chill it for a bit.
Once the balls are formed, chill. I found that freezing them for about an hour worked best. This ensured they were plenty firm enough to be dipped in chocolate. Speaking of chocolate, melt your chocolate of choice on the stove top with a bit of coconut oil to ensure it’s nice and smooth. Once melted, take the chocolate out of your pan and pour it into a measuring cup. Let it cool only a minute or two. Take your lollipop stick and dip it into the chocolate, then put it into the first ball. Dip the ball into the chocolate, swirling gently until it’s completely covered. Immediately put on your sprinkles. Then, set your cake pops in a place they can set without being damaged. Styrofoam works best.
